The sprouted seeds, or simply sprouts, are well suited additions to the diet especially during Winter to Spring transition time.
Sprouting history is found in ancient Asian cultures, and was probably introduced to our country in the early 1900’s by Japanese and Chinese immigrants. The liver is associated with the season of Spring in Asian traditions. The concept of Spring cleaning applies to boosting the health of the body, just as it applies to preparing one’s home environment. Sprouts are said to cleanse the liver, and help to clear stagnant energy or qi.
Sprouts are highly concentrated sources of nutrients, especially vitamin C. In addition, they contain vitamins E, B-complex, and A, calcium, magnesium, selenium and zinc. Sprouts are rich in antioxidants, amino acids, and free fatty acids.
Sprouts are a wonderful way to expand bodily energies that have been drawn inward during the cold winter months. They add flavor and texture to any dish. The freshest sprouts are available in several varieties year round at the Santa Fe Farmer’s Market.
