
The Santa Fe Farmers Market Institute, Kitchen Angels, and Home Grown New Mexico have teamed up to present classes on how to shop for and cook local and organic meals on a budget. This community collaboration brings together the talent of all three organizations to focus on cooking healthy, local food that is both delicious and affordable.
The last two classes of the 2011 series will be held on December 7 and 10. We are delighted to announce that our guest chefs this month will be chef and author Sharon Louise Crayton on Wendesday, 12/7, and Katharine Kagel of Cafe Pasqual’s on Saturday, 12/10. The classes, which can accommodate 30 participants, will be held in the kitchen of Kitchen Angels, 1222 Siler Road, in the Coll-Green Angel Depot.
Classes consist of a demonstration by a local chef on how to prepare an entire meal using local and organic ingredients. Attendees will be able to help in the preparation. The challenge will be to create a filling meal for a family of four that costs under $20. Recipes will focus on simple, easy, and quick meal preparation and may include cooking extra food for another day’s meal. The recipes can be halved for singles or couples, or doubled to feed larger families or to provide more meals during the week.
Each class costs $10 per person. WIC and EBT customer may attend FREE. Participants will enjoy samples of the cooked meal, along with other light fare.
The classes are made possible through the contributions of the three sponsoring organizations and the chefs who are donating their time to share their knowledge.
The Healthy Food Cooking Coalition of Santa Fe created the classes knowing that people would like to include more organic and local foods in their meals, but feel it is not within their budget. Cooking a meal also takes time, which can be in short supply. Therefore, Local Organic Meals on a Budget will show participants how to shop, prepare, and enjoy tasty meals made with local and organic foods—for less! The Coalition would also like to emphasize that eating locally grown food has a long list of benefits—it’s fresher and therefore more nutritious, better for the planet, and more supportive of the New Mexico economy. Classes and handouts will serve to educate participants in making healthier and more sustainable choices.
Attendees will receive recipes, cooking and shopping tips, options on where to purchase the ingredients for a meal, information on how much the entire meal costs to make, and the benefits of buying and eating fresh, local and organic food.
